As @nsj say, regular length shafts should be ok. The threaded part of a normal pickup switch is probably about the same length as well. Check the thickness around the holes regularly while routing the control cavity.

I've just done the dish method for my carve top today. I put something flat inside the cavity then used a vernier gauge to check the depth of the holes and routered the cavity till the holes were about 6mm. Regular cts pots fit fine.
