Try cutting a thin bit on your bandsaw, double side tape it onto a lump of wood and use a block to sand..........

Try taking a shaving off a bit of your body offcuts with a plane, adjust the depth of cut to get the thickness you want. Why have I never thought of that! Excellent tip @robin.

TBH @peebee, unless you’re planning on repeating the fec up on future builds and therefore needing lots of veneer, you can find small offcut pieces on eBay, or I can just put some bits & pieces in...
