I have a similar problem … spot a nice piece of wood and think “that’ll do nicely on a build” and grab it.
I’ve probably got enough of those nice pieces to build all the guitars I’m ever going to build.
Naturally, I bought something new for my last build …

I've got enough old brazilian mahogany to do a neck through and another body plus old northern ash for necks, also there's a tree trunk down the track where I live that I'm waiting to aquire. Farmers brother is supposed to be sawing a metre out the middle for me that I'll take to a friends to get cut into board. Spalty looking sycamore.
I have some thinner boards of mahogany that I want to cut and plane to make a hollow body superstrat too lol
I think it might just fit through my old trusty bandsaw
