It is a great looking logo! You are worrying too much...
Providing you use Ebony Veneer and Black Superglue any gaps will be pretty much invisible. My advice is just do your best with the dremel for the i and use a drill for the dot. Make sure the glue is proper dry before sanding or inlay dust will mix with it and make it go grey.

I was thinking of smallwondermusic.co.uk as recommended by Bailey Guitars, or rothkoandfrost.com where I spotted the chequered binding. But that would be either Mother of Pearl or celluloid.
I’ll just have a quick Duck Duck Go* of laser cut thingies.

I think both versions of the logo look great! Almost hard to choose...
I like what you did to the LP headstock, that little hole makes a big difference.

I'm in two minds about your logo font. To keep with the Mackintosh style, then straight, and I think that suits the gibson style headstock. I would say the sloped one looks better on the tapered headstock though. If I was made to choose, I'd go for the sloped logo.
